3 medium green peppers
Salt
1 beef bouillon cube
1 (6 oz.) can tomato paste
1 c. water
½ lb. ground beef
½ c. chopped onion
1 clove garlic, minced
1 ½ c. cooked rice
½ tsp. Italian herb seasoning
1 c. shredded mozzarella cheese

Directions:
Directions:
Cut peppers in half lengthwise; remove seeds and membrane. Sprinkle with salt. Place in 2 qt. baking dish.

Dissolve bouillon cube in tomato paste and water. Set aside. In 10” skillet, cook beef, onions and garlic until beef loses redness. Drain fat. Add rice, seasoning, ½ tsp. salt, 1 c. tomato paste mixture and ½ of the mozzarella. Fill peppers with equal amounts of beef mixture. Top with remaining tomato paste mixture and remaining mozzarella cheese.

Cover, bake at 375° for 45 minutes.
