3 medium green peppers
1 beef bouillon cube
1 (6 oz.) can tomato paste
1 c. water
lb. ground beef
c. chopped onion
1 clove garlic, minced
1 c. cooked rice
tsp. Italian herb seasoning
1 c. shredded mozzarella cheese

Cut peppers in half lengthwise; remove seeds and membrane. Sprinkle with salt. Place in 2 qt. baking dish.

Dissolve bouillon cube in tomato paste and water. Set aside. In 10 skillet, cook beef, onions and garlic until beef loses redness. Drain fat. Add rice, seasoning, tsp. salt, 1 c. tomato paste mixture and of the mozzarella. Fill peppers with equal amounts of beef mixture. Top with remaining tomato paste mixture and remaining mozzarella cheese.

Cover, bake at 375 for 45 minutes.
