4 boneless chicken breasts (remove skin)
2 tbsp. olive oil, plus more for breasts
4 tbsp. margarine
2 ½ tbsp. Dijon-style mustard
¾ c. coarse breadcrumbs
2 tbsp. chopped fresh thyme (or dried)

Directions:
Preheat oven to 375°. Rub chicken breasts lightly with olive oil and season with salt and pepper. Sear chicken over medium-high heat for 5 minutes.
Combine 2 tbsp. margarine with mustard. Melt the remaining 2 tbsp. margarine and mix with breadcrumbs and thyme, and season with salt and pepper. Smear chicken with mustard mixture, place in baking dish and sprinkle with breadcrumbs.

Roast until chicken is cooked through and top is golden brown, about 45 minutes. Serves 4.
