2 c. cooked rice
2 tbsp. chopped parsley
½ lb. bulk pork sausage
1 ½ c. diced cooked chicken or turkey
1 c. cornbread crumbs
2 eggs, beaten
1 ½ c. chicken broth
½ tsp. salt
½ tsp. pepper

Optional:
½ c. onion
½ c. bell pepper
½ c. celery

Directions:
Directions:
Combine all ingredients and mix well. Turn into lightly greased 2 qt. casserole. Cover and bake at 350° for 30 minutes. Remove cover, and bake 15 minutes.

Serve with giblet or mushroom gravy. For added flavor add onion, bell pepper and celery. Makes 6 servings.
