1 large cucumber
2 T. sugar
1 T. white vinegar or apple cider vinegar
16 oz. sour cream or plain yogurt
salt to taste

Peel cucumber. Slice paper thin. I use the slicing blade on food processor because I make a triple batch and it does it in a split second. In bowl, whisk together sugar, vinegar, and sour cream/yogurt. Add cucumbers and toss to coat. Add salt to taste. Serve immediately or chill.

I know this recipe is old because I remember eating it when I was little.In addition to that, I have the original recipe in my mom's handwriting. On the reverse, I drew some very cute faces with my name and the "J" is backwards. I must have been 5 or 6. An oldie but a goodie! Very refreshing for summer and sometimes I snip dome fresh herbs into it.
