2 cups icing sugar
1 cup self raising flour
2 tbsp custard powder
2 cups desiccated coconut
6 egg whites
200g melted butter, cooled
10 plums, halved, stones removed
icing sugar and cream to serve

Preheat oven to 180
Grease and line a 22cm round cake pan
Sift sugar, flour & custard powder into a bowl
Add coconut, mix well.
Create a well in the centre & add egg whites and butter.
Stir gently to combine.
Pour into prepared pan.
Cut plums into quarters, arrange over cake mixture. Bake for 1 hour or until skewer inserted into the centre comes out clean. Stand for 5 minutes.
Turn out on wire rack to cool
Dust with icing sugar and serve with cream.
