Beef top round steak, cut 1 ½” to 1 ¾” thick
½ c. sherry
½ c. soy sauce
¼ c. oil
¼ c. lemon juice
2 tbsp. brown sugar
½ tsp. ginger
1 clove garlic, minced
10 drops hot pepper sauce

Chill steak. Score on both sides in diamond pattern, ½” deep. Combine remaining ingredients in saucepan; cook slowly, 10 minutes. Then chill. Place steak in bag and add marinade, carefully pressing out air. Tie bag securely and place in refrigerator overnight.

Remove steak and grill over coals or in broiler so surface of meat is 4 to 5 inches from heat. Brush with marinade and turn occasionally. Carve in thin slices across grain and serve.
