60 Ritz crackers, crushed
1/2 c. melted butter
2 3-oz boxes instant coconut cream pudding
1-1/2 c. milk
1 quart butter pecan ice cream (softened)
1 8-oz cool whip
Directions:
Directions:
Mix crushed crackers with melted butter. Spread 1/2 to 3/4 cracker mixture in 9"x13" pan. Combine pudding with milk and beat for two minutes. Fold softened ice cream into the pudding mixture. Place mixture on top of crumb crust. Cover with cool whip, then top with remaining crumbs. Place in freezer until ready to serve.
