2 tsp olive oil
1 cup chopped onion
1/2 cup diced celery
1/2 cup green pepper
3 cloves minced garlic
3 cups chicken broth
3 cups cubed sweet potato
1 can (19 oz) diced tomato
1 can (19 oz) chickpeas
1 Tbsp lemon juice
2 tsp grated fresh ginger
1 tsp cumin
1 tsp curry
1 tsp coriander
1 tsp chili powder
1/2 tsp salt
1/2 tsp pepper
1/4 cup raisins
2 Tbsp peanut butter

Directions:
Directions:
Heat olive oil in large saucepan and add onion, celery, pepper and garlic. Cook and stir until veggies begin to soften. Add remaining ingredients except raisins and peanut butter. Bring to a boil. Reduce heat to low and simmer. Cover for 20 minutes or until sweet potato is tender. Stir in raisins and peanut butter. Nice garnished with fresh cilantro.
