"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

2 Tbsp canola oil
2 Tbsp butter
1/3 cup dark molasses
1 cup brown sugar
1 Tbsp grated fresh ginger
1 large egg white
1 tsp vanilla
1 cup white flour
1 cup whole wheat flour
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
sugar for rolling

In large bowl combine oil, butter, molasses, brown sugar, ginger, egg white and vanilla. Stir until well blended. In another bowl mix remainder of ingredients. Add to the molasses mixture and stir by hand just until you have a soft dough. Don't over mix. Form into balls and roll in sugar. Place on cookie sheet and bake at 350 until just set around edges. Cool and enjoy! Can double the recipe to get 4 dozen cookies.
