2 Tbsp canola oil
2 Tbsp butter
1/3 cup dark molasses
1 cup brown sugar
1 Tbsp grated fresh ginger
1 large egg white
1 tsp vanilla
1 cup white flour
1 cup whole wheat flour
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
sugar for rolling

Directions:
Directions:
In large bowl combine oil, butter, molasses, brown sugar, ginger, egg white and vanilla. Stir until well blended. In another bowl mix remainder of ingredients. Add to the molasses mixture and stir by hand just until you have a soft dough. Don't over mix. Form into balls and roll in sugar. Place on cookie sheet and bake at 350º until just set around edges. Cool and enjoy! Can double the recipe to get 4 dozen cookies.
