1 watermelon (5 lbs)
1 sweet onion
1/4 cup red wine vinegar
salt and pepper
1/2 cup extra virgin olive oil
2 tbs chopped fresh mint
4 ounces crumbled feta cheese
6 whole mint sprigs

Directions:
Directions:
Cut watermelon into bite size pieces
Peel and slice onion into rings

In a bowl, combine vinegar, salt, pepper, and whisk until salt dissolve. Slowly whisk in the olive oil. Add chopped mint, taste and adjust seasonings if needed.

In large bowl mix watermelon, onion and feta. Pour in dressing and mix carefully. Garnish with mint springs.
