Ingredients: 1 Pepperidge Farm Puffed Pastry Sheet (thawed) 4 medium sized tomatoes 1 tsp. salt or seasoned salt 8 oz. shredded mozzarella cheese 4 oz. feta cheese 1/4 cup chopped onion 2 cloves garlic, minced 1/4 cup herbs (basil and oregano) 1 tbsp. olive oil Cooked spinach (optional) Cooked chicken (optional)

Directions:Preheat oven to 400º.
Spread thawed puff pastry on a baking dish. Bake for 10 minutes or until brown. Remove from oven and flatten with a fork.
Sprinkle tomatoes with salt or seasoned salt and let sit for at least 20 minutes.
Layer mozzarella, feta, and onions on the pastry. Distribute 1/2 of the herbs. If using spinach and/or chicken, add now.
Distribute the tomatoes on top with the rest of the herbs and drizzle with the olive oil.
Bake at 400º for 15 minutes or until cheese is melted. |
