1 cup flour
¾ cup rolled oats
½ cup packed brown sugar
2 tsp baking powder
½ tsp soda
¼ tsp salt
¼ tsp nutmeg
1 egg
1 cup diced rhubarb
1/3 cup vegetable oil
1/3 cup orange juice



Topping:

¼ cup rolled oats
¼ cup packed brown sugar
2 Tbsp chopped nuts
2 Tbsp butter
pinch of cinnamon

Directions:
Directions:
In a bowl stir together first 7 ingredients. Mix in rhubarb. In a separate bowl, stir together oil, juice and egg. Add to flour mixture just until dry ingredients are moistened. Mix together topping ingredients and sprinkle over batter in muffin tins. Bake at 400º for 18 minutes until brown.
