1/3 cup olive oil
2 tablespoons cider vinegar
1-1/2 teaspoons Dijon mustard
1/2 teaspoon dried tarragon
3 apples, 1 green, 1 red, 1 yellow
1 cup sliced celery
1/2 cup walnut pieces, toasted
1/2 cup sliced pitted dates
4 ounces cheddar, cut in small pieces

Directions:
Directions:
For the dressing: Put the first 4 ingredients into a jar with tight fighting lid and shake.
For the Salad: Halve and core apples. Cut in 1/4 inch thick wedges. Put into a mixing bowl with celery, walnuts, dates and cheese. Toss with dressing to coat.
Note: To toast walnuts heat oven to 350º . Spread walnuts in a pan and bake 12 to 15 minutes till golden.
