1 1/2 cups white flour
1/2 cup whole wheat flour
3 Tbsp white sugar
2 Tbsp wheat germ
2 Tbsp skim milk powder
1 Tbsp baking powder
1/4 tsp each salt and nutmeg
2 eggs
2 cups milk
2 Tbsp vegetable oil
1 tsp vanilla

Directions:
Directions:
In bowl, whisk together white flour and whole wheat flour, sugar, wheat germ, skim milk powder, baking powder, salt and nutmeg. In separate bowl, whisk together eggs, milk and 1 Tbsp of the oil. Pour over flour mixture and stir just until combined. Heat large non stick skillet or griddle over medium heat. Brush with some of the remaining oil. Using 1/4 cup batter for each pancake, pour batter into pan. Cook until bubbles break on top but do not fill in-2 or 3 minutes. Turn and cook until bottom is golden, about 1 minute. Makes 18 pancakes.By adding whole wheat flour, wheat germ and skim milk powder, you can increase fibre and calcium intakes without anyone even knowing. The pancakes are as good with salsa or chili sauce as with syrup.
