3 c. diced raw rhubarb
3/4 c. granulated sugar
1 (3 oz.) box strawberry jello
1/4 tsp. strawberry flavoring
1 (3 1/2 oz.) box of instant vanilla pudding
1 1/2 c. cold milk
1 (8 oz.) carton Cool Whip, thawed

Mix rhubarb and sugar in heavy saucepan; let stand 1 hour. Simmer until rhubarb is tender. Have the heat low so it won't scorch. Remove from heat; stir in Jello until dissolved. Let get syrupy. Add flavoring. Prepare pudding with milk and beat well; let thicken. Add Cool Whip; blend well. Pour rhubarb into pudding mixture; lightly swirl. Refrigerate several hours or overnight.
