3/4 c. creamy peanut butter
1/2 c. butter
1 1/4 c. firmly packed light brown sugar
3 Tbsp. milk
1 Tbsp. vanilla
1 egg
1 3/4 c. all purpose flour
3/4 tsp. salt
3/4 tsp. baking soda

Directions:
Directions:
Heat oven to 375º. Combine peanut butter, butter, brown sugar, milk and vanilla. Beat at medium speed of electric mixer until well blended.

Add egg. Beat just until blended.

Combine flour, salt and baking soda. Add to creamed mixture at low speed. Mix just until blended.

Drop by heaping teaspoonfuls 2 inches apart onto ungreased baking sheet. Flatten slightly in crisscross pattern with tines of fork.

Bake one baking sheet at a time at for 7-8 minutes, or until set and just beginning to brown. Cool 2 minutes on baking sheet. Place sheets on wax paper on countertops. Remove cookies to paper to cool completely.

Layer in cookie jar with wax paper between cookies when cool.

These are the softest cookies. When you take them out of the oven at 8 minutes, you won't think they're done, but they are. They set up as they cool and stay nice and soft.
