1 lb yellow squash, chopped
1 1/2 c grated cheese
6 - 8 Ritz crackers
1/2 stick margarine
1 - 2 eggs
1 medium chopped onion
1/4 c milk
Salt and pepper to taste

Directions:
Directions:
Boil squash and onion in salt water until tender. Drain and mash. Add cheese and margarine while hot. Add beaten eggs and milk. Mix thoroughly. Crush crackers and mix in squash. Add salt and pepper to taste and pour in a lightly greased casserole dish. Bake at 350º for 20 - 30 minutes.
