1 pkg. white cake mix
1 TBS. lime juice
6 TBS. butter
3 ½ c. powdered sugar
¼ tsp. salt
1 tsp. vanilla
1 egg white, unbeaten
1 ½ TBS. lime juice
2 TBS. grated lime peel, divided

Directions:
Prepare cake mix as directed on package. Stir in 1 TBS. lime juice and 1 TBS. lime peel. Pour into
2, 8” greased layer pans. Bake as package directs. Cool.

Icing:
Cream butter with salt and vanilla. Add egg white. Add powdered sugar, alternating with lime juice and beat well after each addition. Frost cake and sprinkle with remaining peel.

(Note: I like to use raspberry preserves as the filling between the 2 cake layers. Also, garnish with fresh raspberries or serve raspberry sherbet with this)
