1 pie crust (use ready bought)
1 ½ c. shredded mozzarella cheese
5 Roma tomatoes
1 c. basil leaves
4 cloves garlic
½ c. mayonnaise
¼ c. grated Parmesan cheese
1/8 tsp. white pepper

Directions:
Directions:
Bake a weighted-down pie crust at 450 for 8 minutes. Remove from oven and sprinkle crust with ½ c.
Mozzarella cheese. Cool on wire rack and reduce oven temperature to 375.

Cut the Roma tomatoes into slices and drain on paper towels. In a food processor, combine basil and garlic and pulse until finely chopped. In a
medium bowl, combine remaining Mozzarella, mayonnaise, Parmesan and pepper.

Arrange tomato slices atop cheese in cooled pie shell. Sprinkle the basil and garlic mixture
over tomatoes. Take remaining mixture and spoon (spread it) over the top.

Bake at 375 for 35-40 min. Let cool and cut into wedges.
