2 cups sugar
3 eggs
1 cup shortening, melted
3 cups flour
1 1/2 tsp. baking soda
1 tsp. salt
3/4 tsp. cinnamon
3/4 tsp. nutmeg
3 cups apples, peeled and chopped
(about 4 medium-size apples)
1 cup pecans, chopped
1 tsp. vanilla
1/2 tsp. almond extract
1 tsp. fresh lemon zest

Thoroughly grease and flour a 9 X 13 - inch pan.
Pre-heat oven to 350º F.

Cream sugar and eggs; add melted shortening, and beat well. Sift together flour, baking soda, salt, cinnamon, and nutmeg. Add to creamed mixture and mix well.
Add apples and nuts, and mix well. Dough will be thick. Add both extracts, plus, add lemon zest and mix well.
Spread batter into prepared pan to all corners and as even as possible. Bake until done; about 1 hour. No frosting is needed. When cool, cut into squares. A scoop of ice cream is a great addition when serving.
