1 cup & 2 tbsp. all purpose flour
1/2 tsp baking powder
2 eggs
1/4 cup & 2 tbsp. granulated sugar
1 tbsp. honey
11/2 tsp. anise flavoring

In a small bowl, stir together flour and baking powder; set aside

In medium bowl, combine eggs & sugar; beat with electric mixer on medium speed until mixture thickens, increases in volume and becomes light yellow - about 3 minutes.

Preheat oven to 400º. Line a 16x11" jelly-roll pan with wax paper or parchment paper.

Stir batter briefly to eliminate large bubbles. Carefully spread batter in center of prepared pan,making a single 16" log about 2 1/2" wide. Bake until firm, about 12 minutes. Remove from oven; cool on rack 5 minutes. (May be sliced and served at this point as a soft "sponge").

Slice warm loaf into 24 3/4" slices, arranging slices on their sides on same baking sheet and return to oven. Bake until lightly browned on both sides: 3-4 minutes.

For a variation, you can substitute real anise seeds for some of the flavoring. Experiment to find your comfort level. 2 cookies = 87 calories with 1 g fat.
The cookies can also be made without the honey for a slightly less sweet version.
