3 slices of thick bacon
4 large eggs
¼ cup if milk
½ cup of butter Melted & cooled
1- 6 (oz) pkg Cornbread mix
8 dashes of hot pepper sauce
1 medium onion
1 (10) oz.pkg. frozen spinach (use only half of the spinach) Or Chopped broccoli drained and thawed.
1 ½ cups fully cooked ham ½ inch cubes
2 cups finely shredded sharp Cheddar cheese
Chopped fresh parsley for garnish

Preheat oven to 350 degrees. Cook bacon and reserve (1 table spoon of drippings)

Beat eggs in large bowl. Add milk, butter, cornbread mix and hot pepper sauce, stirring until blended. Stir in onion, crumbled bacon, spinach, ham and 1 ½ cups of cheese.

Pour batter into greased square baking pan and sprinkle with remaining ½ cup of cheese over the cornbread.

Bake 30 to 35 minutes or until set and golden brown. Let rest 5-10 minutes on cooling rack. Sprinkle with bacon crumbles.
