1/4c olive oil
1-2lbs baby red potatoes (1 bag)
fresh dill
4 cloves of garlic sliced

Directions:
Directions:
Cut potatoes in half or quarters depending on size (I go with bite size pieces). Toss with oil. Rip up desired amount of dill and toss with potatoes and sliced garlic until well coated. Bake uncovered in a glass pan for 30 minutes (until tender and browned) at 375º

These are a great side for any pork, chicken, or beef meal without being as heavy as mashed potatoes and are quite a bit healthier.
