3-5 thick slices applewood-smoked or peppered bacon, diced
2 lb. sweet potatoes, peeled, cut into 2-inch chunks
2 medium onions, peeled, cut into 8 or more wedges
1 tsp. dried thyme
1 tsp. salt
1/4 tsp. fresh ground black pepper

Preheat oven to 375º F. Cook bacon in a large, deep skillet until crisp. Remove from heat; transfer bacon with slotted spoon to a paper towel and set aside. Add potatoes and onions to skillet; toss with drippings. Add spices; toss again.
Spread mixture in a single layer onto a 15"X9" jelly roll pan or shallow roasting pan. Bake 40 to 50 minutes or until golden brown and tender. Transfer to a serving bowl; top with reserved bacon.

If needed, you can add a little olive oil to the skillet to coat the vegetables before baking.
