1 pound flank steak
1 TBSP Pale dry sherry. Opt
3 TBSP soy sauce
1 tsp sugar
2 tsp cornstarch
1 TBSP oil
2 med green peppers, cut into ½ in squares
4 slices gingerroot

Directions:
Directions:
Cut the flank steak lengthwise into strips 1½” wide, then crosswise into ¼” slices. In a large bowl, mix the wine, soy sauce, sugar and cornstarch. Add the steak slices and toss with a large spoon to coat them thoroughly. The steak may be cooked at once, or marinated for as long as 6 hours. Heat oil in a wok or large skillet over high heat for about 30 seconds. Reduce the heat to moderate if the oil begins to smoke. Immediately, add the pepper squares and stirfry for
3 minutes or until they are tender, but still crisp. Scoop them out with a slotted spoon and reserve. Add the ginger to the wok, stir for a few seconds, then add the steak mixture. Stirfry for about 2 minutes, or until the meat shows no sign of pink. Discard the ginger. Add the pepper and cook for a minute, stirfrying, then transfer the contents of the pan to a heated platter and serve with steamed rice.
