2 14 oz cans black beans rinsed and drained divided
5 tbsp of Mayo
1/3 cup plain dry bread crumbs
2 tsp cumin
1 tsp dried oregano
1/4 tsp cayenne
1/4 cup finely chopped cilantro
3tbs vegetable oil
A little chopped onion
Salt and pepper
A squirt of ketchup
A squirt of mustard
4 soft hamburger buns (double everything for more)
buy whatever you want to add like sour cream; salsa, lettuce

pulse 1 can beans in food processor with mayo, bread crumbs, cumin, oregano, and cayenne, ketchup, mustard until a COARSE puree forms. Transfer to a bowl and stir in cilantro and remaining can beans. Form into patties. Heat oil in a skillet over med/high heat. Cook burgers until outsides are crisp and light brown, turning once, about 5 minutes total. Serve. They don’t work on grill. Fall apart easily. Best if you refrigerate 30 min before cooking!

Claudia and I love these and they are full of fiber. You can always add other veggies..
I just recently made these during the covid-19 pandemic. Linda, Jack and Lauren loved them! We discussed tattoos at dinner... Jack would get an arm band of film. Linda a smiley face on her thumb pad. I suggested I might consider the profile of Grandfather Mountain. It was a fun conversation!
