Baby beef liver-cut from the butcher 3/4 inch
2 large onions sliced into rings
Salt and pepper
Canola oil

Directions:
Directions:
Coat liver with flour and add to a large skillet with 1/2 inch of canola oil to cover the bottom. Salt and pepper the liver and fry over medium heat for 7-10 minutes on each side or until golden brown. Turn heat down accordingly if it gets too brown too fast. When liver is cooked, remove it from the skillet and place it on a plate. Place onions in the skillet with all the drippings that remain. Saute onions over low to medium heat or until onions are tender. Lay all of the onions over liver and serve. You can also make gravy from the drippings by adding flour, potato water, and salt and pepper. Once gravy is made, you can put the cooked liver back into the gravy and simmer.
