8 large shiitake mushrooms, stems removed
2 tbsp olive oil
1 tsp lemon juice
1tsp balsamic vinegar
1/2 tsp mixed dried herbs
1 tbsp fresh tomatoes, diced
1 tbsp sun-dried tomatoes, diced
2 black olives, sliced
1 tbsp Parmesan cheese, freshly grated
1 tbsp mozzarella cheese, grated

Directions:
Directions:
In a medium bowl place the mushrooms, olive oil, lemon juice, balsamic vinegar, and herbs. Let the mushrooms marinate for 1 hour.

Place the mushrooms on a baking sheet. Sprinkle on the fresh tomatoes and the sun-dried tomatoes. Place the sliced olives on top.

Sprinkle on the parmasan and mozzarella cheeses.

Place the mushrooms under a preheated broiler for 1 minute, or until the cheese has melted.
