Chicken legs, thighs, and breasts with skin
2 jars of canned tomatoes (or 3 cans of tomatoes)
2 large onions, chopped in medium pieces
1/2 stalk of celery, chopped 1x1 inch pieces
2 large green peppers, chopped 1x1 inch pieces
1 lb mushrooms, chopped
salt and pepper
flour

Directions:
Directions:
Coat your chicken pieces in flour, add chicken to a large skillet with 1/2 inch of canola oil to coat bottom. Salt and pepper your chicken and fry 5-8 minutes on each side or until golden brown. Remove chicken and drain on paper towels. Place cooked chicken in a large kettle and add tomatoes and chopped veggies. Simmer for 60-90 minutes over medium heat or until veggies are tender. Serve over white rice and great with yeast rolls or homemade bread.
