7 cups unsweetened coconut milk (NOT LITE) - about 4 cans
1 1/3 c. cocoa powder
1 1/3 c. sugar
2 tsp. vanilla extract
1/2 c. finely shredded coconut (unsweetened is best)
1/2 c. chocolate chips (optional)

Directions:
Directions:
Add the cocoa powder to 1 can of the coconut milk, and stir until well-blended. Put into a large pot, and add the rest of the coconut milk and sugar. Heat just until boiling, then turn off heat. Add vanilla, and cool in the refrigerator several hours. Add the coconut and chocolate chips, and mix in an ice cream maker until done!
