1 egg
1 c. sugar
2 tbsp. all purpose flour
1 tsp. vanilla extract
3/4 lb. rhubarb cut into 1/2" pieces (3 cups)
1 pint fresh strawberries, halved

Topping:
3/4 c. all purpose flour
1/2 c. quick cooking or rolled oats
1/2 c. cold butter or margarine

Directions:
Directions:
In mixing bowl, beat egg. Add sugar, flour, and vanilla. Mix well. Gently fold in rhubarb and strawberries. Pour into crust. For topping, combine flour, brown sugar, and oats in a small bowl. Cut in butter until crumbly. Sprinkle over pie. Bake at 425º
for 35 minutes with edges covered and an additional 25 minutes uncovered.
