1 to 1 1/2 lbs ground beef
1 med. onion - chopped
1 can (1 lb.) refried beans
1 tsp. salt
1/8 tsp garlic powder
1/3 c. taco sauce (Picante sauce)
1 c. quartered, pitted ripe olives
22 to 26 corn tortillas
Salad oil for frying
2 to 3 cans (10 oz. each) enchilada sauce
3 c. cheddar cheese
Olives, sour cream, canned green chile salsa (garnishes)

Directions:
Directions:
Saute onions & ground beef until meat is browned & onions are soft. Stir in beans, salt, garlic powder, taco sauce & olives; heat until bubbly.
Heat up oil in small frying pan & enchilada sauce in another sauce pan or small frying pan.
Dip tortillas, one at a time, in hot oil to soften, & drain quickly with a paper towel or hold over pan of oil. Then dip shell in hot sauce, fill with 1/3 c. of gr. beef filling, & then roll & place flap side down in ungreased shallow 3 qt. baking dish. Pour remaining enchilada sauce evenly over tortillas so all are covered: cover with cheese.
Bake uncovered in 350º for 15 - 20 mins. or refrigerate up to one day, & increase baking time to 45 mins. Garnish with olives, sour cream and canned green chile salsa.
