4 cucumbers
1 med onion
1 c cream and 2 tbsp vinegar, or a small tub of sour cream
salt
Paprika to taste

Peel and slice the cucumbers really thin and add to chopped medium yellow onion. Add 2 T of salt, mix well, and let bowl sit at room temp for a couple of hours. This will produce a lot of liquid. With your hands, squeeze out as much liquid as possible, and put in another bowl. Then add paprika and sour cream and mix well. Refridgerate before serving. You can also use heavy cream and 2 T of vinegar in place of the sour cream..result is about the same.

Great cool cummer salad. We use to put on top of mashed potatoes with a fried chicken dinner for summer picnics. tailgate parties, air shows, and family get togethers. Ask Cari about air shows!
