1 lb crawfish tails, frozen package, thawed, will do
1 cup chopped Creole seasoning (mixture of onions, bell pepper, celery, parsley)
Corn starch, about 1/2 tbsp.
Cayenne and black pepper and salt to taste.
Pie crust, 9 inch

Directions:
Directions:
Sprinkle the crawfish tails with some cayenne and black pepper and salt and set aside. Saute the seasonings until onions are clear. Add the crawfish tails and stir a little longer. The crawfish tails are already cooked so don't overdo it. Mix the corn starch with a little cool water then stir into the crawfish mixture until thickened. Pour into the pie shell and bake 350º until crust is done. You may add a top crust or top with bread crumbs, cracker crumbs or leave alone...it's up to you!
