2 Cups fresh flour (2nd cup scant)
1 Lb Extra Sharp Cheddar, coarsely grated
1 teas sea salt
1/2 teas cayenne pepper
1 stick butter (1/2 cup)

All At Room Temperature

Directions:
Mash all together; for best results, mound onto a sheet of waxed paper and knead with hands until most of it is together in a lumpy ball. (it's fun!) Divide dough in half and form each half into a log. Roll up each log in waxed paper and chill for an hour. Slice as thin as possible, try to make the slices uniform so they bake at the same rate. Place on an ungreased baking sheet. No space in between is needed, as they don't spread. Bake at 400º for 10 minutes. Watch closely, but do not underbake.

Much easier to mix if everything is room temp; if sliced too thick or underbaked they will seem doughy; more flavor after cooled; I always end up making several batches through the holidays because no one can stop eating them!
