2 pkgs. bulk pork sausage (12 oz. each)
1 medium bell pepper (chopped)
1 medium onion (chopped)
3 c. frozen hash brown potatoes
2 c. shredded cheddar cheese
1 c. Original Bisquick Mix
2 c. milk
1/4 tsp. black pepper
4 eggs

Directions:
Preheat oven to 400º. Grease rectangular baking dish. 13x9x2 inches. Cook sausage, bell pepper and onion in a 10 inch skillet over medium heat, stirring occasionally, until sausage is no longer pink; drain. Stir together sausage mixture, potatoes and 1 1/2 cups of the cheese in baking dish. Stir Bisquick© mix, milk, pepper and eggs until blended. Pour into baking dish. Bake uncovered 40-45 minutes or until knife inserted in center comes out clean. Sprinkle with remaining cheese and bake 1-2 minutes longer until cheese is melted. Cool 5 minutes.

This is a slightly different version from Flora's (which is where I got the idea) that I got online on the Betty Crocker web site. I was looking for an Easter dish to make ahead and pop in the oven the next morning. This did the trick.
