3 pounds new, red potatoes Quartered
2 tbsp olive oil
1 pound fresh mushrooms, halved or quartered
1 tsp garlic, minced
1 cup red pepper, sliced
1/2 cup green onion, sliced
1 tsp dry thyme leaves, crushed
1/4 tsp fresh ground black pepper

Preheat oven to 450 degree. In a large 13x 9 inch baking pan toss potatoes with olive oil. Bake uncovered for 10 minutes. Stir in mushrooms, red peppers and garlic. Bake uncovered until potatoes are nearly tender, about 20 minutes. Stir in green onions, thyme, pepper and salt to taste. Bake until vegetables are tender, about ten minutes.
