2 c. all-purpose flour
2 Tbsp. sugar
4 tsp. baking powder
1/2 tsp. salt
2 eggs (beaten)
2 c. milk
4 Tbsp. cooking oil

Directions:
Directions:
In a mixing bowl, stir together flour, sugar, baking powder and salt. In another mixing bowl, combine eggs, milk, and cooking oil. Add to flour mixture all at once. Stir mixture just until blended, but still slightly lumpy. Pour about 1/4 cup batter onto a hot, lightly greased griddle for each standard size pancake. Cook until pancakes are golden brown, turning to cook second sides when pancakes have bubbly surfaces and slightly dry edges. Makes about 16-20 standard size pancakes.
*Buttermilk pancakes: Prepare as above, except reduce baking powder to 2 teaspoons and add 1 teaspoon baking soda to flour mixture; substitute buttermilk or sour cream for milk. Add additional buttermilk to thin the batter if necessary.
**Buckwheat pancakes: Prepare as above except substitute 1 cup whole wheat flour and 1 cup buckwheat flour for the all-purpose flour; substitute brown sugar for the sugar.
***Macadamia Nut Pancakes: Use either the regular pancake recipes or buttermilk pancake recipe and add the desired amount of chopped macadamia nuts and a bit of finely chopped macadamia nuts.
