3 (8 oz.) blocks sharp Cheddar cheese
1 (7 oz.) jar diced pimientos with liquid
1 (4 oz.) jar diced pimientos with liquid
1 - 1 1/2 cups mayonnaise
1/8 tsp. black pepper, or to taste

Directions:
Directions:
Grate the cheese as finely as possible. (This is the secret to a creamy spread.) Add the pimientos with liquid. Add mayonnaise until desired consistency that will not require extra mayonnaise on bread slices. Finally, blend in the black pepper.

Cover and refrigerate several hours or overnight for flavors to blend. Will keep at least one week in the refrigerator.
