4 boneless skinless chicken breasts
1 Tbsp. oil
1/2 c. apricot preserves
1/2 c. blueberries
3 Tbsp. Dijon mustard
1/3 c. white wine vinegar

Directions:
Directions:
Rinse chicken, and pat dry. Heat oil in a frying pan over medium high heat. Add chicken; cook, turning as needed until browned on both sides. Meanwhile, mix in a small bowl the preserves, and mustard. Spread mixture over tops of chicken pieces and sprinkle with blueberries. Reduce heat to medium low, cover and cook until meat is no longer pink (about 15-20 minutes). With a slotted spoon, lift chicken and blueberries to a platter. Keep warm. Add vinegar to pan, increase heat to high, and bring sauce to a boil. Boil uncovered, stirring occasionally, until the sauce is reduced by about a third. Pour sauce over chicken and serve.
