1/2 lb smoked sausged, cut into small slices (like 1/2")
1-3 Tbsp vegetable oil
5 Tbsp flour
1 cup chopped onion
1 cup chopped celery
5 garlic cloves, pressed
1 bell pepper, chopped
2 cups chicken broth
1 can (28 oz.) diced tomatoes
1-2 tsps. Creole Seasoning (Konriko is good, but any of them will work)
Apprx. 4 cups cooked chicken, cut up or diced
hot cooked rice

Cook sausage over high heat in Dutch oven for 5 minutes, stir often. Remove sausage, but do not pour grease out of Dutch oven. Add enough oil to the grease in Dutch oven to make about 3 Tbsp. and whisk in flour. Cook over medium - high heat, whisking constantly, about 5 minutes. Add onion, celery and garlic and cook for five minutes, stirring often. Stir in broth, diced tomatoes and creole seasoning. Heat to a boil then cover and reduce heat, simmering for about five minutes. Add sausage and chicken and simmer covered for about five more minutes. Serve over rice.
