I usually make a big batch of this because it keeps and just seems to get better and better
1 5lb of potatoes
3 good size onions or 4
salt and pepper to taste
half and half
Peel potatoes and cube
chop onions
Cook potatoes and onions in as little water as possible [about enough water to cover 1/3 or so of potatoes]. Add 2 tsp of salt. Cover and let steam until potatoes are done. Do not drain water. Add half and half to make soup consistency. Salt and pepper to taste[takes quite of bit of salt]. You can also add grated cheese and melt through soup.

º Do not boil. Just simmer on very low so milk doesn't scorch

If you have any questions about this recipe call me. Most recipes like this I just throw the ingredients in after all these years. The only thing you have to watch is not to have the heat too high as the potatoes will scorch.
