2 - 3 medium onions, chopped fine
1/4 cup lard or shortening
1 1/2 lbs fresh pork shoulder, cubed
1/2 tsp. caraway seed (optional)
2 tsp. paprika
salt to taste
dash of cayenne pepper
2 cups water
2 tbs flour

Directions:
Directions:
Saute onions in lard. Add pork, caraway seed, paprika, salt and pepper. Brown meat. Add 1/2 cup water and simmer on really low in a covered pan until tender (about an hour). Sift the flour lightly over the meat juices and stir until brown. Add remaining 1 1/2 cups water and simmer 10 - 20 minutes. Serve with rice or bread dumplings.

I don't normally cook with lard but sometimes "ya just gotta do it"! It doesn't taste the same without it. This is a very traditional Czech dinner. Enjoy!
