1 pkg. (12 oz) frozen mixed vegetables, thawed
1 onion, chopped (Med)
1/4 tsp. dried thyme
1 lb. ground beef
1 jar (12 oz) mushroom gravy
1/2 tsp. cornstarch
1 tsp. balsamic vinegar
1 pkg. (7.2 oz) butter-and-herb flavored mashed potato mix, (2 pouches)
1 1/2 cups hot water
1 1/3 cups milk
1/4 cup butter

Preheat oven to 375 F. In large non-stick skillet over medium-high heat, cook vegetables, onion and thyme until softened and skillet is dry, 7 minutes. Add beef and cook, stirring frequently, until no longer pink, 3-4 minutes. Stir in gravy. With fork, mix cornstarch into vinegar, stir into skillet. Bring to boil. Reduce heat to low, simmer 5 minutes.
Meanwhile, prepare potatoes according to package directions using water, milk and butter. If desired, transfer to pastry bag fitted with star tip. Divide beef mixture among 4 (1 cup each) ramekins, pipe or spread potatoes over top. Place on baking sheet. Bake 15 minutes or until lightly browned.

I do not use piping of potatoes or single dishes. I make one bigger dish and spead potatoes as I wish. Bake longer than the 15 minutes...maybe 35 min. or more until lightly browned potatoes. I also use a large onion. Can sprinkle shredded cheddar cheese over the potatoes before baking for an extra yum.. I found this receipe to be very good and easy to make. Use the ingredients they suggest.
