2 c. sugar
1 1/2 c. oil
3 eggs
2 t. vanilla
3 c. flour
1 t. salt
1 t. baking soda
2 medium apples, peeled & finely chopped (2 cups)
1 c. chopped nuts, optional
Caramel Glaze (below)

Caramel Glaze

1/2 c. butter or margarine
1/2 c. packed brown sugar
2 t. milk

Directions:
Directions:
Heat oven to 350º. Grease and flour a 12 c. bundt cake pan.

Beat sugar, oil, eggs and vanilla in large bowl with electric mixer on med. speed until light and fluffy. Stir in flour, salt, and baking soda until smooth. Spread batter in prepared pan.

Bake 1 hour to 1 hour 20 minutes or until toothpick inserted in center comes out clean. Cool 20 min. in pan. Remove from pan; place on wire rack. Spoon caramel glaze over warm cake. Serve warm or cold.

Glaze

In a 2 qt. saucepan, heat all ingredients to boiling, stirring occasionally. Boil 2 min. stirring constantly; remove from heat.

Note: You can also double the glaze recipe and spoon it over warm cake slices instead of glazing the cake top.
