2 large yellow onions
4 tbsp unsalted butter (i have used regular also)
1/8 or more vegetable oil
1/4 tsp ground cayenne pepper
1 tsp kosher salt
1/2 tsp ground black pepper
4 ounces cream cheese at room temp, very important
1/2 cup sour cream
1/2 cup good mayonnaise (you can use miracle whip, but it tends to be too sweet)

Dice the onions into same size pieces. Heat the butter and oil in a large saute pan over medium heat. Add the onions, cayenne, salt and pepper and saute for 10 minutes. Reduce heat to med-low and cook, stirring occasionally, for 20 more minutes or until the onions are browned and carmelized. Allow the onions to cool. I like to drain off any excess oil.
Place the cream cheese, sour cream and mayo in a bowl, you can use your stand mixer fitted with the paddle attachment and beat until smooth or use your hand mixer. Add the onions and mix well by hand. Taste for seasoning. It is much better if you allow the dip to blend together in the fridge for a few hours. Serve at room temp
