1 1/2 inch piece of fresh ginger
4 garlic cloves peeled
2 1 1/2 pound flank steaks
3 tbsp red wine vinegar
2 tsps pepper
1 1/2 tsp Dijon mustard
3/4 tsp salt
6 tbsps olive oil

Peel ginger and cut into thin slivers. Measure 2 tbsp and save extra for another use. Cut garlic into thin slivers. With a sharp paring knife, make small slits over the top and bottom surface of the flank steak. Insert ginger and garlic into slits.
Place the steaks in a shallow nonreactive dish, which will hold them comfortably.In a small bowl, whisk together vinegar, pepper, mustard and salt to blend. Whisk in olive oil. Pour this mixture over the steaks. Cover the meat with plastic wrap and refrigerate, turning several times at least 2 hours or overnight. Bring to room temperature 30 minutes before grilling.
Light the BBQ and oil the rack. Grill steaks 6 - 7 minutes per side. When done, transfer meat to cutting board. Let rest 5 minutes. Cut meat diagonally (against the grain) into thin slices.
