1-1/2 lbs. cooked pork
3/4 c. soy sauce
3 T. oil
3 green peppers (narrow strips)
1 onion (narrow strips)
1 lb. 4 oz. can pineapple tidbits (drain and reserve juice)
Sauce:
3 T. cornstarch
1 T. soy sauce
3 T. vinegar
1/2 c. sugar
1/3 c. water

Directions:
Directions:
Slice pork, set in shallow dish, pour soy sauce over and marinate covered 1 hour. Heat oil in saute pan, add peppers and onions. Cook over high heat 1 minute. Stir constantly. Remove from pan, drain pork, add to the skillet along with the pineapple juice, bring to a boil. Lower heat and simmer 5 minutes. Add the pineapple, peppers, and onions. Stir to mix; simmer a minute. Combine sauce ingredients thoroughly. Add to pork mixture, stirring constantly. Cook until thickened. Serve with rice.
