2 tblsp sweet chilli sauce
2 tsp spreadable cream cheese
2 eggs, lightly beaten
1 1/2 cups self raising flour
2 rashers bacon, finely diced
1 small zucchini, grated
1 green shallot, thinly sliced
1/2 cup grated tasty cheese
1/2 cup olive oil

Grease 2 x 12 hole mini muffin pan.
Whisk chilli sauce and cream cheese together in a small bowl then whisk in eggs.
Sift flour into a large bowl, add bacon, zucchini, shallots and tasty cheese then stir in egg mixture and oil to form a soft batter.
Spoon mixture into the prepared pan and bake at 180c in a preheated oven for 15 - 20 minutes or until muffins are well risen and golden.
Serve warm.
