75 pickles
1 c. coarse salt
1 tsp. alum
5 c. sugar
4 c. vinegar (white)
green food coloring

Directions:
Directions:
Wash pickles. Cover with cold water and 1 c. coarse salt. Let stand 6 days. Stir daily. Drain salt water off and cover with boiling water for 3 mornings. The third morning, split the end of the pickles. Add 1 tsp. alum to water.

Always drain the pickles and add fresh boiling water. Keep them covered. Then boil 5 c. sugar, 4 c. vinegar (white) and green food coloring and pour this on. Add a few pickling spices tied in a bag. Reheat this for 2 mornings. The third morning, put in jars and cover with boiling syrup. Seal. If you don’t have this amount of pickles, it doesn’t matter. If there is too much syrup, put in jar and save for next batch.
